I’ve been doing meal prep for a while now, so I don’t have an excuse to stay at home during the week to cook dinner. This one was a bit of a challenge; to make the most food for the least money.
Of course a pasta bake is easy to make and always involves lots of cheese so it seemed a pretty good option. We went to Asda for the ingredients:
- Pasta, 1 bag of Asda smartprice – 29p
- Cheese, ready grated Red Leicester – £2.50
- Broccoli – 50p
- Mixed peppers, 3 in a packet – £1
- Red onions, 3 – 75p
- Chopped tomatoes, smartprice, 1 tin – 29p
- Pasta sauce – creamy tomato, one jar, 75p
Total cost of £6.08
Quick method – cook the pasta until al dente, chop the veggies into chunky pieces and lightly fry (they will cook in the oven), add the chopped toms, pasta bake sauce and half a jar of water to the veggies and stir in, season however you want, (chilli or cayenne?!) add in the pasta and stir it all up. Transfer to an oven dish and stir in some cheese. DON’T JUST PUT THE CHEESE ON TOP!!! Put into the oven on 200 degrees for 15-20 minutes.
Once it’s cooled put into Tupperware and store in the fridge for up to 4 days.
This makes ten meals and can be eaten hot or cold!
